Lion's Mane is native to North America, Europe and Asia. They have a unique appearance, being large, white, shaggy mushrooms that look similar to a lion’s mane when they grow. Other names include “hedgehog mushroom” and “bearded tooth.”

It is an endangered species and it is illegal to pick it the wild. So growing your own Lions Mane is the best way to use and eat this mushroom.

Lions Mane has a meaty, chewy texture but it’s often described as tasting like seafood such as lobster or crab. It can be sauteed, fried, stewed, roasted or added to sauces. They can be used as a meat substitute in any dish, including lasagne, chili and bolognese.

It is common in gourmet cooking where it is used as a speciality mushroom. It can be eaten raw or cooked and can be dried or soaked and then drunk as a tea. There are also some coffees that are made from coffee beans and Lions Mane.

Lions Mane can be used in almost all recipes that require mushrooms. It should be stored in a folded paper bag in the fridge.

Lions Mane extract is often used in health supplements.     

In Asian countries such as Japan, China and India Lions Mane is used in medicine. It has bioactive compounds which means that it may aid and promote good health in the body.

It is possible that Lions Mane can have health benefits on the digestive system (protecting against stomach ulcers and inflammation), heart (reducing the risk of heart disease) and brain (stimulating the growth of brain cells and thus helping to protect against degenerative brain diseases). Research on the effects of Lions Manes in humans has been very limited and these findings are still very much in their infancy.
