Grey Oyster Mushrooms
The grey oyster mushroom originates from Europe but are now frequently used in Asian cuisine.
They have grey caps which as they grow older start to become wavy and sometimes split. They grow in clusters.
These oyster mushrooms are rich in protein, vitamins and minerals and sometimes act as an antioxidant.
Grey Oyster mushrooms can be sauteed, grilled, deep fried or stir-fried, especially with soy sauce. They work very well in sauces and soups as they absorb the liquid and therefore maintain a very good texture. They are also a great compliment to meat, poultry and fish dishes.
Grey Oyster mushrooms have a mild but sweet, nutty flavour, with a delicate flesh. Their stems are juicy and chewy. They need very little seasoning and can be eaten with a pinch of salt and pepper. They also taste good with butter and garlic.
These mushrooms can be used as a substitute for meat in most dishes including, bolognese, lasagne, and chili.
Once you have harvested your mushrooms you can store them in a paper bag in the fridge
